I think to get the full picture and feel of it you should try it out yourself as the game has a F2P model where you are limited to certain skills and areas and equipment. Its hard for me to describe the system in depth because its quite a complex system but almost all skills have purposes in and outside of combat which is personally extremely enjoyable for me as the combat in game is a bit lacking in depth and feels in general quite outdated compared to modern games (the game is old and runs on a really slow tick rate). You dont specifically make the endgame gear via crafting skills but they play parts in certain high level gears and niche equipment. In the current version of the game mining and smithing were reworked where your mining is pretty static in areas without having to go around as much since ores are always on the same spots with mechanics that encourage you to pay attention to ores shining to increase your speed of leveling and resource gain (ores are in clusters in one area). Each skill which there are multiple of goes to level 99 from level 1 with new stuff to unlock with almost every level. RuneScape would fit pretty well into what you describe as long as you are fine with the grind.
